When students return from the fall break we will begin our garde unit. During this unit students will learn all about the cold station. They will learn how to create and prepare various salads, dressings, garnishes and mayonnaise.

Currently students are working on creating various types of soups. Students are learning how to create internatinal soups, cold soups, broth soups and cream soups.
Once the soup unit is completed, students will move on to the Garde unit, which includes salads and garnishes.

Students are currently working on creating their own pasta dough. They will make 3 different kinds of ravioli with sauces.
Students will have a preformance assessment during this unit. They have to create the filling and sauce and produce it from memory during 2 90 minute class periods.
5th 6 week progress reports were sent home with my students on the 6th of September, they were to have them signed and returned this week. If your child has a C,D or F please expect a phone call from me.
Please take note that the 1st reassessment deadline is the 9th of October.

During this unit students will research and learn about cuisine from all parts of the globe.
Students will work in teams of 2 to create a food demonstration and presentation on a cusine from their chosen country.
Students are required to cook a dish native of the area, and present information in regards to the cultural influences of the country.
I am excited for this unit and can’t wait for the demonstrations.
